Cilantro is very popular and an easy-to-grow herb. The leaves are parsley-like, yet are spicier that regular parsley. The aromatic and flavorful seeds are used in potpourri and to flavor pastries, salad dressings and meats. It's a staple in Mexican dishes and fresh salsa. Cut Cilantro leaves when they are 4" to 6" high. Gather seeds as they ripen. They may be used whole or crushed.
